Pecan Crusted Fish for Four

- Four 5 oz fish filets, this recipe works well with a variety of white fish or salmon
- 1/4 cup Those Nuts!
- 1/4 Panko bread crumbs
- 1/2 cup fresh parsley
- Salt and pepper
- Butter
Preheat your oven to 400 degrees. In a food processor, combine Those Nuts!, panko and parsley and pulse until well chopped and mixed. Season fish with salt and pepper, and apply a layer of the crust mixture to the fish, gently pressing it in to help it stick. We've found that if you use too much of the crust mixture it doesn't work as well. Melt some butter in a hot skillet, and sear the fish, crust side down first, until golden brown. Flip and sear the other side. Repeat with each individual filet. Pop the fish in the oven to finish cooking -- this will not take long but will vary based on how long you seared the filets on the stove-top and your particular oven. It took me about 5-7 minutes.
