Chewy Pecan Oatmeal Raisin Cookies

- 2 sticks softened butter (I used salted)
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 Tbps. vanilla
- 2 cups AP flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 1 cup raisins (I used golden raisins!)
- 1/2 cup (or more) Those Nuts!
- 3 cups quick oats
Preheat the oven to 350 degrees and line two baking sheets with parchment. With a mixer, cream the butter, sugars, eggs and vanilla on a medium speed for a few minutes until nice and fluffy and light in color. Add the dry ingredients, to the wet mixture. I sifted them first to ensure there were no lumps left. Mix by hand until the flour is combined. Stir in the raisins, pecans and oats. Roughly measure out 2 Tpbs. size balls and place them evenly on your cookie sheet. Bake for 15-20 minutes, depending on your oven. Enjoy!
