Oatmeal Banana Bread

1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 2 eggs
- 3 bananas, mashed
- 1 tsp. vanilla extract
- 1/4 cup Greek yogurt
- 1 cup oats, plus some for topping
- 1 1/4 cup all purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 6 oz, more or less, Those Nuts!, plus some for topping (and snacking!)
Preheat oven to 375 degrees and prepare and greased loaf pan. Whisk togther oil and sugar, then add both eggs and mix well. Add the mashed bananas, vanilla and yogurt and fully incorportate. Fold in oats, flour, baking powder and baking soda. Before the dry ingredients are fully incorporated, add six ounces of Those Nuts!, more or less depending on your preference, and finish folding your batter. Once in your loaf pan, sprinkle with remaining oats and place Those Nuts! into the surface. Bake for 45 minutes to 1 hour depending on your oven.
