Kale and Brussel Sprout Salad

Yield: 10-12 appetizer servings
- 1 bag brussel sprouts, trimmed and sliced thinly
- 5 or 6 large handfuls kale, with any leftover stem removed
- Dried cranberries
- Shaved parmeseam cheese
- Those Nuts!
- Lemon apple cider vinaigrette
- Juice of 1 lemon (about 4 Tbps.)
- 4 Tbps. apple cider vinegar
- 1 Tbps. kosher salt
- 2 tsp. black pepper
- 1 tsp. dijon mustard
- 1 cup EVOO
This salad is easy to make how you like it! I didn't measure any of my toppings, its just what you prefer. You can sub the type of cheese, cranberries for pommegranate, really a lot works! This vinaigrette is super easy to make and I always make extra to use for other salads or as a marinade for chicken.
