Fig Pecan Bars
22nd Jul 2022
- 2 cups AP flour
- 1/2 tsp cinnamon
- 1/2 cup pecan butter
- 1 cup Those Nuts!
- 1/2 cup vegetable oil
Blend pecans in the food processor and gradually add in the oil.
- 4 Tbps. melted coconut oil
- 4 Tbps. maple syrup
- 2 cups fresh figs
Combine the flour and cinnamon in a bowl. Add in the wet ingredients and mix well into a dough. Either in the microwave or on the stove, cook the figs until you're able to mash them easily with a fork. Option to add a small amount of sugar to the figs here to make these bars a little sweeter. In a greased pan, make a layer with 2/3 of the dough. Then layer your fig mash, and finish with the remainder of your dough on top. I rough chopped some Those Nuts! and sprinkled on top. Cook at 375 degrees for 20-25 minutes. Top with whipped cream for a fun dessert or have with your morning coffee for a filling breakfast bar!
