Arugula Pesto

Yield: 2 cups
2 cups arugula
- 1 cup Those Nuts!
- 3 garlic cloves, smashed
- 1 Tbps salt
- Juice of 1 lemon
- 1 cup Pecorino Romano, Parmigiano-Reggiano, or whatever you have on hand
- 1.5 cups EVOO
Combine all ingredients, except the olive oil, in a food processor. Turn on high and slowly pour in olive oil until you have reached the consistecy you're looking for. Use for pasta, baked fish, chicken salad, vegetables, pizza, sandwiches and so many more dishes.
